Popcorn Pouches.  Take 2 tablespoons of popcorn kernels and 2 tablespoons of vegetable oil and put in the middle of an 18-inch square of foil.  Pull up the sides and seal the edges, leaving room for the corn to pop.  Wrap a piece of string around the top of the pouch and attach it to a stick.  Shake over the fire until it pops.  You can add your favorite seasonings to the mix like paprika, Old Bay or lemon pepper.

 

Banana Boats.  Cut a long slit in the skins of 4 bananas (like a baked potato).  Pour peanut butter chips, chocolate chips or shredded coconut into the opening of the skin then wrap in foil and heat in the fire long enough for the filling to melt and the banana to soften.

 

Campfire Cheese.  Take the mess out of making nacho cheese sauce by placing chopped Velveeta into the center of an 18-inch square of foil.  Pull up the sides and seal and place into the smoldering ashes of the fire so it doesn’t burn.  After the cheese has melted, peel down the sides to make a bowl and enjoy with your favorite corn chips.  If you want a little more upscale snack, try a putting an 8-ounce wheel of Camembert or Brie into the center of the foil and wrap it up.  Put it into the smoldering ashes for 10 to 12 minutes.  Peel back the edges to form a bowl and dip shreds of crusty bread in for a warm snack.

 

Nutella and Banana S’mores.  This is an easy variation on the usual S’mores recipes.  Put Nutella hazelnut spread and banana slices between two peanut butter cookies.  Melt a marshmallow over the fire and squish it between the cookies.

Hamburgers are practically standard for camping trips, because they are easy to whip up, grill and eat. The “same old, same old,” however, can get, well, a little old. Here are a few tips and a recipe to help you snazz up your burgers on your next resort getaway!

Spice it up: If you typically don’t season your meat, it’s time to start. Salt and pepper go a long way, but feel free to throw pretty much any spice or seasoning you like in the ground meat. A few popular options are season salt, grill seasoning, garlic powder (or garlic salt – just don’t salt it twice if you use this!), cayenne and/or chili powder if you like some spice or a little curry powder for a good flavor whallop.

Switch it up: Yes, beef is the classic meat of choice when it comes to hamburgers, however, switching up the ground meat you use is a pretty easy way to make something different. Experiment with ground chicken or turkey,some East Texas venison or even go a little fancier and use lamb. With lamb, you can even mix it with ground beef.

Stuff it!: Stuffed burgers are all the rage these days, so much that there is even a special tool to help you with the process (it’s not really necessary though). The idea is pretty basic: make double the patties with your meat, but flatten them somewhat thin. Mound some cheese, bacon, wilted greens, mushrooms or really anything you can think of on one of the patties, cover with another patty and squish and mold the ends together. Greek Stuffed Lamburgers

Makes 4 large burgers
1 ½ pounds ground lamb, or a mix of ground beef and lamb
Zest of 1 lemon
1 Tablespoon fresh oregano (or 1 teaspoon dried oregano)
salt and pepper to taste
1 cup Crumbled feta cheese
½-1 cup wilted spinach (or frozen spinach, thawed)

1. Mix the ground meat with lemon zest, oregano and salt and pepper. Separate the meat into 8 balls of about equal size, and flatten into large patties.

2. Place some crumbled feta and wilted spinach into the center of four of the patties. Top each with another patty and press together at the edges, somewhat sealing the stuffed burger.

3. Grill to your desired doneness. Serve on a bun, between cibatta bread, or in a pita pocket.

You may be daunted to attempt roasting this giant fowl, but have no fear, turkeys have been cooked in much worse situations than a crock pot before. Great food of course!  If you’ve done much camping at Texas RV parks maybe you’re already a pro at dutch oven cooking, or maybe you’ve always wanted to try your hand at it, but have been a bit too intimidated to get started.

Roger L Beattie of the Backwoods Home Magazine describes dutch ovens: “squatting heavily in dank basements, drafty attics, and dusty, cluttered garages, these three-legged hulks from a bygone era wait impatiently to release their treasures.  Until then, they are pitted by time and tarnished by neglect.  For those who will uncover the mystery, their gaping caverns can once again be brimming with magic.

“From the birth of our nation, Dutch ovens have been an integral and versatile part of Americana.  Sadly today’s high-tech hustle-and-bustle lifestyle has all but forgotten the art of “leather-glove cuisine.”  The coal-black cast iron ovens appear outdated, unfriendly, and forbidding.  Interestingly however, with seven simple secrets revealed, the beginning camp cook and the consummate backyard chef can utilize these forgotten friends to produce a marvelous and unforgettable variety of succulent delicacies.”

SEAFOOD JAMBALAYA

1 pound boneless chicken breast, cubed

1 pound mild Italian sausage, chunked

1 pound mixed seafood (shrimp, crab, crawfish)

1/3 cup oil

1 large onion, sliced and chopped

1/2 cup celery, chopped

2 small red or green peppers, quartered and sliced

2 medium tomatoes, coarsely chopped

1 14-oz. can chicken broth

3 cups okra, sliced

2 cups mushrooms, sliced

1/2 teaspoon cayenne pepper

1 teaspoon black pepper

1 teaspoon white pepper

1 teaspoon gumbo filé (powdered sassafras leaves)

1 tablespoon Worcestershire sauce

1/2 cup orange juice

2 to 3 cups long-grained white rice 

* Option: Replace cayenne with crushed and dried hot red peppers.

Cook in a deep, 14-inch Dutch oven. Heat chicken and Italian sausage until cooked through, but not browned. In a separate pot, steam seafood mixture until done (shrimp will turn pink).

In the Dutch-oven lid or another pan, sauté onions, celery, and red or green peppers until tender. Add the sautéed mixture, along with the tomatoes, broth, okra, and mushrooms to the chicken and sausage. Mix thoroughly.

Add dry peppers, gumbo filé, and rice. Mix thoroughly.

Cover and bring to a boil, then reduce heat to a simmer. Add Worcestershire sauce and orange juice. Add water as necessary to cook rice. Add steamed seafood mixture. Simmer for another 10 minutes.

 Serves 8 to 10.

There’s no surer sign of warm weather in Texas than the smell of delicious food being cooked over an open fire. The days are getting longer, and you’ll find yourself enjoying the mild days and evenings outside cooking and eating while warm breezes carry the aroma from the grill to passersby. While you relax and unwind on your vacation, try a laid-back outdoor meal or two during your stay at Mill Creek Ranch Resort. It’s so easy to do, whether you stay in one of our Texas vacation cabins with a grill or you’ve bought a cottage with an outdoor hearth. Isn’t it amazing how simple food can taste so good when you cook it outdoors? No restaurant needed, just bring a few ingredients and keep them in your fully-equipped kitchen during your stay. Here’s a favorite recipe of our Texas vacation cabins guests:

Bacon Wrapped Jalapenos

You’ll need:

6 fresh jalapeno peppers, sliced in half lengthwise and seeded
1 package cream cheese (8 ounces) (strawberry flavor is fantastic)
12 slices bacon

Preheat your grill to high heat. Spread the cream cheese onto the pepper halves. Wrap the bacon around the cheese-stuffed peppers and secure with a toothpick. Place them on the grill and cook until the bacon is crispy. Enjoy!

Note: You may want to wear gloves when slicing and seeding the peppers to avoid burning your hands.

Texas RV Park Recipes

When visiting our Texas RV park you may want to try your hand at a guest favorite in one of our fire rings. Campfire Biscuits are not only delicious, they are fun for the whole family to make.  Here is our best recipe and instructions for Campfire Biscuits, also known as Biscuits on a Stick. 

Ingredients & Supplies:
Canned Biscuits
Campfire Coals
¾” Wooden Dowel
Cooking Spray
Butter
JamFirst thing you do is enjoy a nice fire with our complimentary first night’s firewood for every RV site.  When the coals are red hot and putting off a lot of heat you get out your dowels and spray the end so the biscuit will come off nicely once it is cooked.

Get out your canned biscuits.  We found that the cheapest and smallest biscuits always seem to work the best.  So don’t go getting fancy with the canned biscuit!  Now, start stretching your biscuit dough until it looks like a nice snake.  Then place one end on the tip of the stick and begin spiraling the dough down the stick.  Make sure to seal all holes or you will be sorry later when your fillings drip everywhere.  You want the dough thin, so it will cook thoroughly and quickly.

Now, take your uncooked biscuit and stick and hold them like you’re fishing at one of our stocked ponds, with the biscuit end directly over the red hot coals.  If your campfire has a ring around it, this next part is fun and easy.  Roll the stick back and forth along the ring for nice even browning of the biscuit.

Once the biscuit is nice and toasty, remove the stick with a swift turn of the stick while holding your biscuit steady.

Now here is the best part.  Add your favorite fixins’ such as; butter, jelly, cinnamon and sugar, down in the cavity of the biscuit. Some rv campers use a sqeeze bottle for their fixins’.  If you are enjoying an East Texas sunrise, you may want to put some eggs and sausage in the middle.  So delicious!
